1. In a medium size bowl, whisk the eggs and and in the oat milk, the salt, the flour and the baking powder on e by one.
2. Whisk until all ingredients are well combined and set aside for 20 to 30 minutes.
3. Wash the apples and then cut horizontally into 1/2 cm slices (see on the photo)
4. In a skillet preheat the coconut oil, when nicely heated (but not burned) add 1/4 cup schoops of the pancake batter to the skillet and place a slice of apple on each pancake.
5. Bake the pancakes for 2-3 minutes on each side on a medium flame, until they get a little browned.
6. I think they are best, served with maple syrup.
