This recipe is one of my favorite breakfast recipes when I want to make something healthy and tasty and do not have that much time. Since my daughter can eat solid food, she wants to eat everything by herself. As I do not want her to eat bread all the time, I started making patties of all kinds. These Pancakes are great for a good start in the day.
OAT AND BANANA PANCAKES - A GREAT BREAKFAST OR SNACK FOR BABIES (8 month+)
Ingredients
- 1 Banana make sure its ripe!!
- 1 Egg
- 50 gr Oats made to flour in food processor
- 1 tbsp vergine coconut oil for frying
Instructions

1. In a bowl squish the banana with a fork until you get a chunky banana mousse.
2. Add the egg and stir until well combined.
3. Add the rolled oats to a food processor or a Vitamix and process until you get an oat flour.
4. Add the oat flour to the banana-egg mixture and mix until well combined.
5. Preheat a skillet over a medium flame and add the coconut oil. When the oil has heated for about 30 seconds add two tablespoonful portions of batter to the skillet (you will get about 5 to 6 little patties).
6. Turn the patties around when golden on the bottom and serve when fried on both sides.
7. Make sure they are cooked through if you serve them to your baby.
